Pepperoni Pizza with melted Mitchelstown Grated Mozzarella Cheese

Ingredients:
for 8 servings:

Base:
1 cup baking mix
2/3 cup water (warm)
1 packet active dry yeast

Topping:
1/2 cup chopped onion
1/2 cup of sliced pepperoni
1/2 cup of Mitchelstown Mozzarella Cheese
1 can of tomatoes
1/2 green pepper, chopped


Preparation:

1. Heat oven to 420º degrees F or 215º degrees C.
2. Mix the baking mix & yeast and stir in the hot water.
3. Turn the dough onto a well-floured surface & knead until smooth (about 20 times); allow the dough rest for a few minutes.
4. Fry the onion in a pan until tender.
5. Stir in the tomatoes & chopped pepper, and set aside.
6. Divide the dough in half. Roll each half on an ungreased baking sheet into a rectangle 13x10 inches in diameter.
7. Pinch the edges to make a slight rim. Spread the tomato mixture almost to the edge.
8. Top with the green pepper, grated Mozzarella Cheese & pepperoni.
9. Bake for 15 minutes or until the crust is brown and the cheese is bubbling.
