In the same manner as a cheese board is chosen, the principle of simplicity should be applied to matching the appropriate wine with a cheese. Personal preferences may be the determining factor in your initial choice and experimenting is good and will help broaden your knowledge and determine what you like.

If however you're looking for a more studied flavour experience, it may be better to match one specific wine with a single cheese rather than 3 or 4. It is worth remembering that wine and cheese share similar characteristics of texture, flavour profile and terms like "full bodied" so try ones that you feel will compliment rather than overwhelm each other.

Cheese in the 19th century was used as a currency to pay rent. This may explain the term "Big Cheese" which described someone of financial standing who was able to afford an entire "wheel" of cheese.
